Still using my modified ECB but in the past 3 or 4 weekends we have checked off a batch of chicken breasts, 20 lbs. of pork shoulder and some ABT's. On Monday we'll try 2 kinds of chicken wings and a pan of cauliflower and cheese. Think low carb mac and cheese, it's better than it sounds.

Prep this morning included making another batch of Jeff's Rub, Jeff's original sauce, some Creole seasoning (Emeril's recipe), and some home made buttermilk blue cheese dressing.

Oh yeah, stopped by Home Depot last evening to stock up a little on charcoal. Thanks SMF for that pointer!

I'm not sure I can wait until Monday...
 
Sounds amazing! Think I’m gonna prep some jerky today & smoke it tomorrow. Then it’s going to be chicken, ribs & beans for Monday

These are my attempt at Skarberry wings* ready to put on the smoker later this afternoon. The other half the wings are resting in Jeff's Rub and will eventually be honey bbq. We'll move the fire into the garage due to forecast thunderstorms.

*Injected with 50/50 butter and Burman's Hot Sauce, then sprinkled with Emeril's recipe for creole seasoning.
 
Darker wings will be Honey BBQ when it's all said and done; lighter ones are Skarberry. Barely visible is a pan of cauliflower "crack" with lots of cheese and bacon.

I attempted to get the temp probe in a wing but not sure how helpful that will be. We will just monitor and adjust smoker temps for a couple of hours and then use the instant read.

Since I am still learning this whole thing, my goal is to not have to order pizza. I'm feeling good about my success so far with this cook - but we'll see what happens.

...no store bought pizza for us tonight! The honey bbq half were the biggest hit. We used Jeff's recipe for those. Our modified Skarberry wings didn't have a lot of zip and I'm sure that's because of the hot sauce we used and my (lack of) injection skills. We tried home made blue cheese dressing and decided that we need another recipe or just get it in the bottle.

The cauliflower 'n cheese was really good with the smoke. We will do that again if there is room in the smoker.

This was our third smoke, and we are still learning and enjoying. Thanks for reading along!
