Hello all.

Received a MB 40" for Christmas this past year. Just recently set it up as the weather here in Northwest Indiana finally (somewhat) broke. Seasoned it yesterday and am 4 hours into smoking for the first time!

3 racks of short ribs. Uncut, which I'm happy about with this smoker. Plenty of room.

Read a post a couple of days ago by SmokinAl where he did a simple yellow mustard/salt and pepper rub only. I added a bit of onion powder.

In the past I've been a fan of saucy ribs, so we will see how this goes.

Really enjoying this so far,and glad I've found this community. Being an automotive buff I've long enjoyed informing myself on forums.

Got TBS my first time out! Smoking with hickory chunks. Let's hope they don't suck!

I overcooked them a bit for my taste, 6 hours at 235. However, they were excellent.

I'm hooked on smoking!

Next weekend, a few full chickens!
 
Congratulation on the smoker and ribs. It only gets better.

3-2-1 method works great on spares IMHO give it a shot sometime!
