Hello everone I'm here in Ohio with a new Gosm smoker Ive smoked in the past using my Charcoal grill, ribs and pork shoulder. Made the switch to the smoker last week the picture is my first brisket on the smoker. So far i'm pleased with the smoker but i'm having troble with the amount of time to smoke stuff. My last attempt was with ribs they were nice and juiocy but i had to pull them after 5 hours could of been done just a tad more for my liking. I guess it will come with time

Hello and welcome to SMF, from a former Ohioan native! Smoking is more of the meat is done when it's done and to an ideal internal temperature rather than by time. If you did St Louis Spares, 3-2-1 is pretty much the standard, but can be modified to your individual needs.
