Hello all,
I have just recently begun using a charcoal smoker. Been having a lot of fun playing around and trying to get used to regulating temps. I have always loved BBQ and have used propane smokers in the past. I found this website after one of my friends offered me a whole lot of Southern Live Oak and I started to research if I could even use that type of wood for smoking (I never did find a for sure yes I can use it or not) it is very confusing trying to figure out if I can use that wood or not because it's hard to differentiate if people are talking about live (green) oak or live (species) oak lol. Anyway to sum things up I'm happy to be here, I am pretty darn good with industrial electronics (industrial maintenance is what I do for a living), I love BBQ, and I don't know if I can use southern live oak in my smoker. I look forward to seeing what all you guys and gals have going on here.
 
Welcome to the forum from another ole Alabama boy up in Maine.

Oak makes a very good fuel for smoking. I use red oak because I have a big supply of it and at no cost.

It does need to be split, stacked, and forgot about for about a year to cure and dry out. Green wood of any kind gives off a bitter taste to most people.
