Hello all! I am new to this forum. It appears to be a good one. I have been smoking meat for many years. Its fun and relaxing to me. I have used my 1,000 pound custom offset Big Bertha! for many years. She never disappoints and was made for cooking a ton of meat at one time. Decided to find an offset wood smoker that was better for the back porch. I did a lot of research. I knew in my mind what I wanted for my needs. For the money and quality, I bought the Bayou Classic 36" offset smoker. Did a test smoke the other day with only 1 rack of spare ribs and 1 Boston Butt. It held the temp perfect. I was able to manipulate the air flow with ease. So far ZERO complaints. The meat turned out perfect. According to my wife and grandson it was better than Ole Big Bertha. I don't know about that. Going to try to add a few pics of the first cooking on the Bayou Classic.
