Hello all! My name is Victor and I have been smoking meat for 3 years now. I have started a catering company built around smoked meats in the Los Angeles area and have enjoyed reading some posts in this forum.

Super happy to be here and can't wait to get some advice from you all.

I've currently got a 48 Lang patio smoker for 80-110 lbs of meat and a chargrill offset that I use when doing smaller cooks. Once I expand further, I plan on getting an 84 Lang on a trailer. I've used a few different smokers in the past and the Lang is my favorite so far!

Good morning and welcome to the forum from a chilly, damp and dreary day here in East Texas, and the best site on the web. Lots of great people with tons of information on just about everything.
