Filling up the Lang 36 today. Should be packed to the gills. My neighbor on the other side handed me 2 racks of baby backs. Sooooo today will be 2 racks of spares, 2 racks of baby backs, 2/3 of the belly cubed up for burnt ends, and 1 spatchcock chicken. First time I'm using the top shelf. Going to hold it between 250-275. Using hickory and some apple chunks. Here is everything prepped and rubbed.

Pork belly just went on. Happy first Sunday of football to everyone and I will update on the progress.
 
Don't forget to be the caring cook and sample everything....just to make sure you got it right.
