Hello,

I am somewhat new to smoking meats. I have been using a small egg shape CHAR-BROIL H2O smoker with only two racks. I am hoping to get some advice on a few different fronts, any help would be greatly appreciated. I am looking for a bigger smoker (4 or 5 racks), gas or charcoal, and where to buy?

Have you considerd electric. I have a MES and love it. There are others also.

4 racks plenty of room and no charcoal or wood for heat.

Sam's has them on sale now.

I got wood,

My smoker eats wood, up to 20" long.
I try to feed my WSM as much wood as possible , but still gets some lump.
 
I got a GOSM an really like the gas, easy ta use an control temps, reasonable price an good equipment. With there current state of business affairs there tuff ta find, but can still be had online I hear. There is one at sears that I beleive is made nearly identical. There is also the smokey hollow (beleive thats the name) that is sold at Gander Mountain an other places, also looks ta be a good unit.

Others will be long ta tell ya bout there's too I'm sure.

I'm new to smoking and like Charcoal and wood, I also like the offset smokers, I just have a brinkmann Smoke N Pit.
 
I use a SNP, a buddy of mine went from charcoal to an electric and likes it better he says, but I think he's just getting lazy in he's old age.
 
I have GOSM Big Block and I traded my GOSM to a friend which I wish I would have kept. I had a Brinkman Electric H2O for 3 years but I prefer the GOSM gasser better. There is a Smoke Hollow type out there that is just about the same as GOSM and comes in different sizes. For electric I currently getting ready to pull the trigger on a Bradely Smoker. I can set temp, internal temp, and its electric. Mainly I need it for my wife and I. I feel guilty firing up my big block for 3 lb meat loaf. Any one recommended by anyone on this site is good a choice.
 
I use a CGSP myself. Pretty good unit, lots of cooking space, and ya can get it less than $200. I went with the CG super and bought the firebox separately, both at Lowes.
 
I use a Brinkmann Smoke N Pit which started life as a charcoal smoker but has been converted to gas.

But I can switch it back to charcoal if I wanted to.

I have a 48" gasser from Cabela's. It has 6 racks and come with sausage hooks. It is very easy to manage the temps and cleans up real nice being it is stainless steel. It was very reasonably priced, as well.
 
...........oh to have my own little slice of heaven!!!!!!!!!!!!!!!!!!!!!!!!!! Very nice looking collection of "LOVE" you have there.
 
Glad to at least see a MES in the line up there. At least that's what a few look like.
 
I too started with a charcoal water smooker and decided it had become a little small. I did some research and found a Great Outdoors Smoky mountain smoker that ran on gas. They come in different sizes with the width being the main distinction. I got the wide version which some call the GOSM bigblock. It is wide enough to hold a full rack of ribs and it comes with four shelves. I chose gas because I already had a gas grill for burgers and I had two propane tanks already. After cooking a pork shoulder on the ECB and then on the GOSM there is no comarison on how convienent the gas smoker is. I have never tries an electric smoker. but the people that use them seem to really love them. I found my smoker at Walmart for under $200.

what the others have said, but let me throw this at you. above all things you have to keep smoking fun and enjoyable so you need to evaluate your life and see what you are looking for. i say definetly go wood/charcoal if you are fortunate enough to have the time to tend smoker often as you will get the best taste from this. if you dont have all that time available and want more of a set and forget then i recommend a gas like a gosm or equivalent. if a truley hands free situation is what you need than an electric mes or bradley is the ticket. the mes offers you more smoke chamber room than the bradley. personally i have all three. my wood/charcoal water smoker i hardley use any more-just dont have the time, my GOSM is my work horse smoker. once i got temp management figured out it turned into a very easy smoker to use with minimal tending required. recently aquired a 40" mes and bought for times when all i have to do is make sure it has fuel for smoke. also for very low temp smoking which is a little difficult with gosm. but i see the mes being used more often as well. in short i am glad i have all 3, not to mention the weber. smoke cook some fantastic stuff on there as well. if it starts to turn into a real chore or you have unsucessful smokes because cant be around enuff to ck on it than your smoking hobby could be short lived. figger out which one meets your needs best and have fun doing it!!!! dont have quite the number of smokers as bubba or mossey but here a pic of mine.
