Need help with smoker and ribs

Ok guys this might sound stupid but i need some serious help. My family love BBQ ribs and my wife spend some money on buying me a smoker Masterbuilt widest one, but recently they  been complaining about how ribs come out, honestly I haven't changed anything I usually do the 321  3 hours on smoker rap them with foil for 2 hours and 1 hour unwrapped, I usually get the ribs from walmart since that is the only place that sells OK ribs but either they come to red from inside witch is the smoke ring or sometimes the fat doesn't crust even though I try taking all the fat away plus I don't smoke them that much i only put 25% of pellets on the amazing tube since we don't really like the full smoke flavor.

This was my method before the smoker, I used to buy short ribs and seasoned them with Rub, Brown Sugar, Honey and Apple Juice  put them on the oven  covered with aluminum foil for 2 to 3 hours, once done  put them on the grill honestly i do remember them coming pretty good 

does anybody have a good method that you guys could recommend, i was thinking doing them like i used to but put them on the smoker for about 30 to 1 hour open so they could get some smoke flavor what do you guys think but im open to  suggestions.

No reason you can't play with the timing. Try smoking 225-250 for an hour +/-, then foil them and leave in the smoker or oven 3 hours or until the tenderness you like. The final step, could be done the next day, would be to finish on a hot grill to crisp the surface and caramelize the rub and any sauce you add. The key is get them tender then hit the grill. Too long just on the grill and they will dry out or burn...JJ

If you use to get good ribs off the smoker, and now they are crap, AND you haven't changed anything, then the only varrible is the ribs themselves.

I'm going to assume that you are using a good thermometer to monitor the smoker temp and not just relying on what it tells you.
