So I planned on doing an 8lb butt for the game today.
I had the butt in the freezer until Thursday then thawed it in the fridge for a couple of days. It was thawed but still pretty cold. I'd say internal temp wasn't much above low to mid 30s.
I preheated my MES to 225 at around 4:30pm and put the butt in around 5pm. I always just set the timer to 1 hour when I pre-heat then set it to 20+ when I put the butt in. Well stupid me forgot to reset the timer and we left for a basketball game. We got home around 9:30 and of course the MES was off and cold. I immediately got it going again at 225.
So long story short, my newly thawed butt was in the MES for about 30 minutes at 225 then sat in it with no power for 4 hours.It's about 35 degrees here so that's about the temp the MES was when I got home, of course it was hot for some period of time.
No probes, injections, etc. I just washed it, rubbed it and threw it in.
