Hi I'm new to smoking and just wondering what people recommend for brisket. Do I leave the meat rolled up or do I cut the strings and lay it flat. Cheers

Im not sure what you mean....would you mind taking a few pics (use your phone?) and post them in the thread

i have never seen a packer (whole) brisket rolled up so you may a a flat that has been rolled up.

Defo flat, the rolled type are really just how the butchers in the U.K. Make it look like a big roasting joint.
