I have a party this afternoon and need some advice on how I can keep spares and baby backs warm until everyone is ready to eat without drying them out.

I hope to have the ribs ready by 4pm and most guests will start arriving at 5pm. Probably ready to eat by 5:30.

I want to be done and ready well before the guests arrive.

I have a masterbuilt XL propane smoker.  Doing St.Louis style spares and Baby Backs. Plan on cooking them in a variation of a 3-2-1 and 2-2-1 method with less time in the foil as I dont want the ribs overcooked and mushy.

Look forward to hearing from you.
