After Steve Steve H Steve H posted this thread about the beef stew that Ann made, I knew I had to make some myself...

This is one of Sheila's favorite meals so here we go...

Some of the invitees to the party. Not pictured is about 3 lbs. of small gold potatoes, 2 packs of fresh mushrooms cut in half, and 1 lb. of frozen sweet peas...

Seasoned up some AP flour with just salt & black pepper. Rolled the stew in the mixture and then into a pan with beef tallow to brown on all sides. It took 3 batches to get it all done...

After all the meat was browned, I put the coarsely chopped onions in to soften...

Once soft, I stirred in 3 Tbsp of tomato paste...

Then deglazed with the unsalted beef broth and stir to combine into a gravy...

Once combined, this was put into a bigger pot along with another quart of the broth, covered and allowed to simmer for about 2 hours...

After 2 hours, the potatoes, carrots, mushrooms, and peas were added and allowed to simmer covered for another 30 minutes or until the potatoes and carrots are tender...

Served over rice with roasted Brussels sprouts with a balsamic glaze and sliced sour dough bread. Time to eat...

It's been unusually cold here with lows in the upper teens and this was the perfect meal for my zoo. Thanks to Steve and Ann for the inspiration...
 
Looks fantastic Charles! Would be a nice meal here as well! We're going to the negative side of zero come Friday and Saturday.

Fantastic looking stew Charles, and with the negative digit temps we're expecting this weekend. That would be pure heaven.

Nice Charles ! Good lookin' meal , but great technique on the cook .
I always cook the tomato paste out like you did , then add the broth .
Flour the beef and browning is classic . Really nice bud .
Got some weather moving in this weekend . Gonna be some cold weather meals here .
 
My concern is the ice storm south of the snow line. And it looks like N. Louisiana will get significant icing. Gonna be power lines down all over.....stay warm people.

Well they've changed our forecast AGAIN. Now the prognosticators masquerading as weathermen and women are saying our lows will be in the upper teens, not single digits they called for just a few days ago. Still very cold for us here...

I think it's moving more to the North , or so " They " say .
Ours went to single digits and snow .
I hope not .
I'm already getting messages to expect power outages .
My guess is ,,, it will be sunny and 75 .

Wonderful meal you had there Charles, I'm sure it's gone by now.😋
I made a pot of beef stew last week, very similar recipe and it was great. Pam was hungry for some stew so I jumped on it. Seasoned flour and browning makes a huge difference. I want to try cooking down the tomato paste with the onion like you did, again looks wonderful.

Oh yeah, it's 6 deg. here in KC right now. Wind chill is below zero. It's supposed to start snowing tonight, 4 to 8" by Sunday afternoon.
