My wife asked if I could smoke some chicken? Challenge excepted 12 whole birds and 2 packs of thighs

My wife has been making a bunch of meal prep meals and she wanted chicken! She got some chicken hahaha 12 whole chickens and 2 family packs of thighs.

I got all the pre flavored chickens only because they were on sale .

I decided to rub them with flavors that went with the prepackaged flavor . I used a very very good lemon and herb rub from my trip to kc,Jeff's rub recipe on the other whole Chickens and a Jamaican jerk rub on all of the thighs I spatchcocked the whole chickens. Here they are all ready to go out to the smoker. You can see my helper in this picture also haha

got my smoker up to 325. Used charcoal with a small amount of oak

took about 5 hours for all the chicken to come up to temp. I also rotated my racks during the cook 2 times and the outside temp was around 0. I pulled them as the breast would get to about 160. Here is the finished product!

What kind of smoker is that?

Chicken all looks great!

The smoker is a T&K Reverse flow smoker size medium ! Wouldn't trade it for any other smoker ! 30 below in mn I'm still smoking meat !
 
Should also mention I had one more rack and room to spare on other racks . I can smoke 21 spatchcocked chickens at one time. Or 8 10/11 pound butts or 12 8 pound butts if i jam it full. 28 racks of baby backs. 7 briskets around that 12 pound mark give or take. Mind you these are loaded amounts but very doable! I love my t&k

Thanks ! His meat amounts are on the low side and also has up to 7 racks but comes with 4. Actual weight was 568
 
Yes all the time ! It is very efficient!
 
I was smoking in a blizzard and used less then a pound of charcoal an hour.
