Good Afternoon Gentlemen,

                                  After many years of fuddling around with every kind of cheap metal smokers possible I have had a big boy smoker built. I'm  very excited to finish it before blasting the surface and applying primer/paint then finally firing it up. My question is do I need to add a tuning plate. The guy that built my pit did a few great things but did some other things that drove me crazy.

I would put a couple of therms at grate level to monitor temps while you season it.

If the temps are reasonably even across the grate, you would need no tuning plates.
