This is my second trip with sausage making. The Bratwurst came out good, though I think the fat content could have been higher. This time I got a 9 pound pork shoulder that looks good. So I made about 3 pounds of Apple and onion sausage. I used 22mm hog casings for this. The results were fantastic. We ate some. And gave our neighbor some. I'll be making this again!
