Doing a small flat today I decided to age it a little to see how it compares .my starting weight was 3lb 6oz Today it was exactly 3lb . Seasoned it up with a lite slather of thick Worcestershire sauce ,kosher salt,coarse black pepper and garlic powder. Will foil @ 165, finish it at 185, rest it and shave thin for some sammies

That looks good. I always enjoy the stall. It let's me know. If I can be patient. I will have some good Q.

 Some times I kick up the heat and power through the stall. It is never as good that way.

Brisket finished about 9pm last night let it rest about a hr before
Putting in fridge, today I sliced it real thin with my meatslicer and made a aujus
And put in crockpot to warm up for dinner. Smoked with a combo
Of oak and cherry wood , great smoke ring and flavor
