Gary,  I don't know how I missed this, but better late than never.  Your bird looked great and the color was awesome.  I spatched all of my poultry now and we really enjoy it.  I brine turkeys, but not chickens.  I read something recently and next time I do a turkey, I'm gonna remove the ribs after I get him spatched.
