I did my first smoke on Sunday, three racks of spareribs and two chickens. Put the ribs on first on top rack of WSM after three hours removed and wrapped in foil and put back on, and put on chickens, all were rubbed with Jeff's rub and the WSM stayed at 230 to 240 all day. Left everything on for about two more hours and removed and let rest for about a half hour and enjoyed. Ribs just fell off the bones MMmmmm! Son and granddaughter thought they were great. Really pleased with everything. Could not have done it without this place and all the great advice I got from reading here.
