Looking like a good day to be smoking pork since another post this morning. Be dueling pork shoulders instead of banjos.

Had a costco boneless pork shoulder in the freezer wrapped in pink freezer paper. Took out to thaw a few days ago. Unwrapped it this morning and it was freezer burnt badly and really dried out. Tried trimming it off to no avail. Looked at date I wrote on package, it was in freezer for about 18 months. Looks like a trip to wally world. They had a few to choose from. Ended up picking out a picnic shoulder, about 11 pounds. Grabbed a half dozen donuts for the kids on way out too. In all my years and many smoked shoulders I have never did a picnic. What could possibly go wrong. A raspberry filled donut made things a little better.

Already behind schedule an hour. Was going to use the stick burner but decided to use pellet since was behind and could work on my sausage smoker build this way too. Fired up the smoker and headed inside.

Mixed up my injection, chix broth, lemon juice, half stick butter, two T rub and half T lemon juice and let cool. Unwrapped the picnic. Wasnt expecting the skin to still be on. Trimmed it off and the bad fat too. Was just under two pounds of skin and fat. Injected with my concoction and coated with my rub. Onto the smoker at 8:30 at 250. Thinking need to bump it up to 275 so can eat on time. If done early, just put into the cooler.

All trimmed up.

Grind the rub so it doesn’t clog the injector.

Nice start for sure, I'm in. What do you think about that Spitjack? I've been looking at different gun style injectors and the brand caught my eye because it's made in America. Which model do you have?

@Gonna Smoke The spitjack is great. I have no idea what model it is since it is 10 years old and doesnt say anywhere. Probably the original and no longer carried. It came with 4 injector needles, brushes, and case. I have not had a single problem with it except when let a neighbor borrow it and they didnt clean it well. That was a neighbor issue and not a product problem. Looking at their website today, I would guess it is the magnum since the tubes look abt the same. You can adjust the amount of liquid per squeeze of the handle which is nice. Definitely buy another if needed too.

Looks like a day for smoking pork. Third post I read. Looks good.

I may need to do something I can get done by dinner. Maybe ribs. Need to head to the store.

Bonus Pics… PBBE from yesterday. Was having a lunch snack and remembered these. I didnt take a finished pic so didnt post a thread. Guessing all the pork cooks is because beef is so expensive and have seen a bunch of pork sales lately. This is the small aldi pork belly. Wife is out of town and she doesn’t like the fat in these so perfect opportunity. Just me and the twins.

You've been busy and all looks great
Spring fever is contagious?

Awesome . I like the longer strands of a picnic shoulder for knife and fork meals .
That's a balanced plate of food too .
Nice work !

I have one also, it's built like a tank! Lots of options for injecting as well with the variety of needle gauges and styles.

Nice work. I prefer to roast/smoke picnic and grind butts.
