Looking like a good day to be smoking pork since another post this morning. Be dueling pork shoulders instead of banjos.
Had a costco boneless pork shoulder in the freezer wrapped in pink freezer paper. Took out to thaw a few days ago. Unwrapped it this morning and it was freezer burnt badly and really dried out. Tried trimming it off to no avail. Looked at date I wrote on package, it was in freezer for about 18 months. Looks like a trip to wally world. They had a few to choose from. Ended up picking out a picnic shoulder, about 11 pounds. Grabbed a half dozen donuts for the kids on way out too. In all my years and many smoked shoulders I have never did a picnic. What could possibly go wrong. A raspberry filled donut made things a little better.
Already behind schedule an hour. Was going to use the stick burner but decided to use pellet since was behind and could work on my sausage smoker build this way too. Fired up the smoker and headed inside.
Mixed up my injection, chix broth, lemon juice, half stick butter, two T rub and half T lemon juice and let cool. Unwrapped the picnic. Wasnt expecting the skin to still be on. Trimmed it off and the bad fat too. Was just under two pounds of skin and fat. Injected with my concoction and coated with my rub. Onto the smoker at 8:30 at 250. Thinking need to bump it up to 275 so can eat on time. If done early, just put into the cooler.
All trimmed up.
Grind the rub so it doesn’t clog the injector.
All ingredients in the pot.
All mixed up and cooling.
Injected and rubbed.
Onto the smoker at 250.
