Tried out the cure I found here and used Butterworth's syrup instead of maple, gave it a three tray smoke in my little chief with hickory chips then into the oven till internal temp was 150.
Came out pretty tasty though a little salty, next batch will be better, learnin curve and all.
Gonna try honey on the next batch and an Alder/ Hickory mix in the smoker......:cool:
