I love jerky and so does my wife and all her family so it seems I am always throwing some beef jerky on my Traeger Timberline 850. My latest effort is a Tabasco Chipotle sauce variation. It turned out ummm WOW!!!
1 bottle Tabasco Chipotle sauce
1 cup beer (dark) Shiner Boch
1/2 cup Worcestershire
8 pickled jalapenos pureed in some beer
1 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. black pepper
1 tbsp. cayenne
3.5 lbs London broil sliced 1/4 inch or so
marinate for a day or more or more or more
smoke about 4 hours or so till dry but pliable
put in Ziploc freezer bags and let cool
seal bags and freeze till ya want some
keep in fridge until gone
this works for me but not traditional dried out jerky that can be stored anywhere
