Hello gentleman

Been a long time since i posted , but just had to share these pics . Went to my butcher and had him carve me up 2 center cut chuckies to smoke for a football party on saturday , GO OHIO STATE , anyhow i wanted monsters so he cut me these 9 pounders ! They are freakin awesome ( and only 3.19 a lb) . So i seasoned them up and put in at 5 pm and will not touch again until 5 am ,im a firm believer of leave them alone ! When i take them out i wrap em and let it sit. Those pics will follow but im sure they will be fantastic !

Now thoses are some sweet looking roast. I'd sure like to fin some like that in my town.
 
Well i didnt get a chance to take finished pics , i know im a dummy , but was running late and hurrying. They didnt get done untill 2pm so i was rushing around. Came oout great but those cuts had alot of waste. Bones fat ect. So i got about 7 lbs of clean meat outta 18. Not too happy about that but they were delicious.
 
Yes i was really surprised at the loss , but these were different than any chuckies i have ever bought at local store or sams. They had huge thick bones in them and a lot of thick fat that never cooked down , was kinda like rubbery. I dont know , flavor was awesome but i think i will stick to sams or costco , much less waste , i will just do more roasts.. Thanks guys !
