I've came to the point where I need to upgrade to a bigger smoker. Right now I'm running a 34Hx28"Wx20"D Homemade job and I'm going to build again. I've Also running it off a 1500 watt Element and a PID

The main use for this will be smoking multi pork butts, bacons, hams, 50-100lbs batches of various sausages and jerky. I don't want to go any bigger then I have to so I was looking to copy the sausage maker size by going with a 48Hx30Wx24D box. Im going to line it with cement board then go with metal over that on the inside. A few things I'd like advice on

-I'm going to run a 5000W element off a relay and my PID to control temps but run a detached side fire box for smoke as you can't beat the taste of a wood fire, what size box should I have And how to I keep the heat transfer over to a minimal

- I want to mount a fan on this to act as a dehydrator for the jerky after it's smoked for awhile, what size should I get?

- can I use rock wool to insulate it? I can get it for free

- I'm going to put 2- 2" intake holes in the front bottom of the smoker, will a 4" vent stack centered in the roof work, or should I put it in the top back

- shelving spacing, I'm going to weld 1" angle to the metal inside to hold the shelves, I was going to space the lips it rest on to every 3 inches. Sound good?

Any other advice is more then welcomed!
