 . Today I will be smoking a small pork loin and a small brisket in the MES 40 with the AMNPS

. I preheated the MES to 250°. put the meat in then got the AMNPS going. For today's smoke I am using oak pellets.

Here I am applying the rub.


Let it sit for a few

. The rub is starting to start taking on that nice

color. I don't use anything for a binder

Here is a pic after 1:45 min. I probed the loin and it is 128°. I will probably take it to 150° IT. If it was for me I would not go that high. However it is going to older "do you call that done" people.
