Mule's boneless skinless chicken breast in 5he MES40 with the AMNPS

Today's smoke is Babyback ribs. Well since the MES40 and AMNPS is already going the chicken breast might as well share the ride. I gave the bird a good rub. The MES is running 235 with 2 hours total time for the breast.

I haven't decided yet what i am going to do with it. Maybe a salad. What are your recommendations?
