MOTHER'S DAY BREAKFAST & LUNCH

We went to the neighbors for MD dinner. But for breakfast we had seen on TV hash brown waffles with bacon in them. That is what Judy wanted to try, so here we go. For lunch we had corned beef sandwiches that were cured from that Prime brisket that I made the burgers out of & some Swiss cheese. No big deal, but good tasting food. So starting with the breakfast.
Got some of my Berkshire bacon cooking in the CI pan on the side burner of the grill.

Didn't take too long to cook.

Next to the hash browns, just Great Value frozen.

Chop the bacon & add to the hash browns.

Mix them up real well.

And in the meantime I'm cooking a couple of fried eggs in the bacon grease.
Well it is a holiday right!

Got the waffle iron hot & sprayed it with Pam.

Put the potato bacon mix in the iron & closed it up.

Well unfortunately it didn't stay together like a waffle, but the hash browns were some of the best I have every had. They were crisp all over, I thought it was a success, but Judy wasn't satisfied.

So she added an egg to the potato/bacon mix & she got what she wanted, a hash brown/bacon waffle with an egg fried in bacon grease. So breakfast was a success.

Now on to lunch. My 2 briskets were in the dry cure for 10 days & my original plan was to take them out, rinse them off & smoke them to an IT of 150, then into vac bags & into the SV set at 155 for 24 hours. I have done several of these & they are always good. BUT this time I thought it would be so easy to just put the bags right out of the fridge into the SV, so I guessed at 145 degrees for 48 hours.

After 48 hours they were not done, so I increased the temp to 154 & let them go another 18 hours. I rinsed off most of the spices & sliced them in half. than did a quick taste test, they were too salty.

So I soaked them in fresh water for about 4 hours.

Then sliced them up.

I made a sandwich with half the point & half the flat & a piece of Swiss between.
Of course a little Dijon mustard never hurt.

All in all it was a good day & believe it or not our neighbors had pizza for dinner, but they did have plenty of beer!!! It was Mother's Day & I think Judy enjoyed herself all day long. I know she slept in this morning, so that usually means she had a fun night!!

Al that sure looks good , and something I mess with a bit . I have used leftover hash brown casserole with whatever meat you want . Works good , holds together . Also have used the cubed hash browns instead of the shredded .
Looks great as usual .
 
Looks great, Al! I’ve tried the “red neck” sous vide method with a thermo and a yeti cooler, but never with an actual sous vide device. That’s something I’d really like to learn more about.

Al Looks like I almost missed this one,Thanks Bear for bringing it up. Great post I have done the waffles with hash browns,using the boxed taters.I like all of it so Likes for you.

That is what I ended up doing, she kept making more & I kept eating more. I never ate so much in my life!!!
