When I made mortadella the other day, I had leftovers that wouldn't fit in the casing. It wasn't really enough to start a new casing, but it was too much to just toss, so I just shaped it into a ball and smoked it with the cased product.
I chopped it into chunks, and made burnt ends out of it using the same techniques I've talked about in beef belly burnt ends. It came out really good...
