Thanks Chestnut! Just woke up from a little nap and put a few more chips in, I'll post some pics when it's ready.
 
Well, it stalled out for a bit but I turned up the heat to 295 and that finished it to 197 within 2 hours. All wrapped up and in the cooler, can't wait for dinner!
