Just did my first pork butt yesterday in my MES 40. Used a AMPS with hickory pellets. Turned out very good but would like a little more smoke flavor. Has anyone tried lighting both ends of an AMPS for more smoke or put 2 AMPS in a smoker for more smoke? Curious if anyone has tried this. Would that make it too smokey and cause it to taste bitter?

Hi there and welcome!

I light 2 rows/both ends all the time when I do chicken.  I like to use my Pit Boss Competition Blend pellets BUT which chicken cooking so fast I don't get enough smoke flavor on the meat unless I burn 2 rows.

I think a pork butt could probably stand up to some double hickory but I would probably blend it with some apple or maple just to be safe.  I'm thinking 70% Hickory and 30% Apple or Maple.

There should be no bitter taste because you get perfect smoke.  You will notice more smoke than usual but don't be alarmed it is still not super thick heavy smoke.

Best of luck :)
