More Meatloaf

What do you do when you find Ground Beef at HEB for $1.99 a pound? You make meatloaf. Made Chef John's Ultimate Mashed Potatoes and Roberts, @tx smoker port gravy along with some green beans and Keith's famous Buck's onion. Did not have a sweet onion so used regular. It did not caramelize near as good but still tasty.

Thanks. Here is recipe. Normally I do them about 425 in toaster oven for a hour. Not really sure why it did not get more caramelized? Onion

Outstanding. I haven't made meatloaf in a long time.
I've found the best way to caramelize regular onions is a touch of added sugar. Makes up for the natural sugars in a sweet onion.

Thanks John. I will try that. I think I remember what happened, I had a couple timers going and I think I turned off early.
