Did another round of bacon..... for some reason one bacon half got missing.... hmmmm , cant be my 20yr old....... this time I let the bacon stand in the fridge for a few days instead of slicing it the next day. It dried a little and got that deep red color..... its like candy bacon... I am going to try this recipe with some cure # 1 next time instead of the TQ and do the 10 to 15 day cure. I really think i am on to something here with jeffs rub.......it is good..... its like eating good ribs but its bacon.....
