Hi everyone 

i was given a coil of moose sausage and have never done a sausage it's about 1 1/2 to 2 in diameter and I have no idea what's in the mix.

I was wondering on smoking times and temps and also what chips

I am told it was pro made at the butchers

ask the person who gave it to you if it has cure or fresh needs cure to be smoked more than likely you don't want to get sick I have seen some that size that do fresh that way and just slice it off and fry it in pan let us know
