Yesterday i was smoking a brisket on my kettle and had a huge spike at hour six. It got up to 350 degrees. The hickory chunk may have contributed but i am trying figure if i did something wrong or if it just lide smoking in a kettle.
 
Kettle Man, evening.... The temp spike could be from the chunk catching on fire...... Or 2 or more chunks will burn if next to each other...  Try burying the chunk in the charcoal so it can't get as much oxygen..... that may help....  Dave
 
I agree that your spike was probably caused by the chunk of wood catching fire.  Burying it in the coal will probably work.  I also recommend using a foil loaf pan 3/4 filled with water place over the fire to help stabilization.
