Hey fellow meat connoisseurs! Today the family and I dined on some scrumptious pulled pork sammies. My plan was to have these for lunch but my newborn decided that wasn't going to happen. I started my fire at 11pm last night and put the shoulder in at around midnight. I prepped the meat 2 days ago and vacuum sealed it for maximum flavor. The first 3 hours I was struggling to keep my temps up, at one point it dipped down to about 150° this was because I wasnt able to watch the fire on account of having to take care of my baby. But once I was able to get him to sleep, I got everything under control at 275° for the remaining time. Smoked it with a mix of apple and hickory. Finally took it out at 2pm and let it rest for 2 hrs before pulling.The wife made jalapeño poppers with some homemade bacon. I made Carolina mustard sauce and also served up the drippings for the sammies. I didnt even need the drippings there was already so much flavor in the meat. I love
