You can make homemade pickles faster than you can go to the store and buy them.
1-large cucumber, sliced in 1/4-inch-thick rounds (2 cups)
1 medium sized onion, sliced in thin rounds (3/4 cup)
1 cup granulated sugar
1/2 cup distilled white vinegar
1 teaspoon salt
1/2 teaspoon mustard seeds
1/4 teaspoon each celery seeds and turmeric
Mix all ingredients in a 2 quart microwave-safe bowl. Microwave on high 7-8 minutes, stirring twice,until cucumber is crisp-tender and onion translucent. Ladle into a glass jar (rinsed with hot water to prevent cracking ) cover, cool slightly and refrigerate. Makes 2 1/2 cups. Can also put green pepper rings.
