after watching a few bbq specials and the wife deciding i needed to start smoking meat......... i did a bunch of research on the web and especially here, i decided on the mes30. seemed like a great smoker for a beginner. after seasoning the smoker i decided on something easy......mac-n-cheese! OMG if you havnt tried it....i highly recommend it! found the recipe on the masterbuilt web site. for my second smoke we decided on a couple butts....... rubbed them last night and put them on this morning, im 2 1/2 hours into the smoke. i think i have the temp dialed in.....seems as if the temp reading on the mes is more of an average then an exact temp. have taken several temp reading @ the vent and seems to have a swing of about 10 to 15 deg. also noticed that the reading on the mes is a bit low....maybe 20 plus deg lower then my thermometer @ the vent. the smoke seems ok......a nice steady stream of blueish smoke. i got the smoke going before i put the butts in, and have added chips once. snapped this pic when i first put them in. sure wish i would have gotten the model with the window.....its killing me......i wanna see whats going on!!!! i will add more pics as the day progresses!! the one accessory i need to purchase is a good remote thermometer.....any recommendations? the one i have is a cheapo from wally world.
