Keep the drip pan and drain clean....

Smoked 8 chickens yesterday, after a delicious dinner, I found my patio covered with black greasy liquid.  The drain was clogged and the drippings had leaked out from the feet of the smoker.  Huge mess. 

The drip pan, racks, and water pan have now been cleaned....not to mention the patio!
 
Use disposable aluminum foil pans under your birds next time to catch the drippings

The black greasy liquid you're seeing, is a mixture of condensation and smoke from inside your smoker

I use a "Boot Tray" under my MES to catch this nasty stuff

The window and/or door is sweating, and running down the door and out thru the seal onto your patio

 No cleanup take the pan out and throw it away and no mess in the bottom onf the smoker
 
The black mess we're referring to is also called "Black Rain"

It sometimes forms on the inside of the smoker, and drips down onto the food.

In the case of the MES, the "Black Rain" forms on the door, and runs down the front of the smoker

Cool or cold weather causes excess condensation to form on the window
