Mes 40 to dehydrate jerky?

Has anyone used a mes 40 to dehydrate jerky? I have been smoking for 2 hours then dehydrating for 5-7 hours, will the mes have enough airflow to properly dehydrate? Would be nice then I can do it all on one piece of equipment.
 
hmm I dont have a MES, but I use my pellet grill to smoke and dry jerky often. start at 180 for 2-3 hours then 225 till dry to my liking. not sure if that helps... hope it does.

I do it that way all the time. Works Great, leave vent wide open, also leave door loosely cracked so steam can escape. I preheat and set the temp at 160 for the first 2 hrs then back it down to 140 for the remainder. You can add smoke after the meat surface looks dry. I use cure on all my products.
 
Absolutely! That 140-160 is about right. It's up to your preference if you want to run smoke the whole time. Leaving the chip loader out will help airflow and draft.
 
It will work excellent. I Run @160° all the time. Anywhere from 5-8 hrs depending on thickness
