MES 40 BT Turkey Day

Tried my first turkey. Thanks to all who put their time in to post and give GREAT info to all who are "rookies" out there. I would not be as successful as I have been without you!

I did a 24 hour brine.
1 cup course salt
1 cup brown sugar
Couple oranges
Large onion chopped
Bunch O' garlic
Fresh thyme & bay leaves

Prep day:
Rubbed it down with EVOO. Seasoned with paprika & Mrs. Dash. Stuck butter with crushed garlic on each piece under the skin.

Stuck her in the smoker at 250 degrees with apple wood until we reached IT 165.

Final product...
Turned out quite good for my first run.

I just bought a MES 40 because it was 200 bucks at academy. I was thinking about trying a turkey on it but had some reservations. Every other turkey has been on my stick burner and have cooked it at 300-325. With the MES only going up to 275 what type of results can I expect?
