MES 30 Smoke Question

Have a few questions about the mes. I have had mine for a month or so and have done several smokes on it so far. I have found it to be fairly accurate on the temp setting and meat probe is within 2-3 degrees of my external digital probe (it is mes 30 Bluetooth with built in meat probe). The issue I am having is with the smoke being generated. It doesn't have an issue making smoke just goes through chips rather quickly but the food coming out doesn't have as strong of a smoke flavor as I would expect. I have done several pork butts, couple turkeys, couple chickens, and several racks of ribs so far. I have been using hickory chips and last pork butt I loaded chips every 30 minutes for the entire cook and didn't wrap during cook and it still doesn't seem to have strong smoke flavor. I'm used to smoking on a 300 gallon propane tank with a wood stove connected to it set up like a very large offset smoker, and have used an Orion cooker, and wsm so I am used to charcoal/wood smoking but completely new to electric smokers. All of the other cookers give a stout smoke flavor and have to be careful of over smoking. My question is there anything I can do to get the same stronger flavor out of the electric?? I'm not opposed to modifying to make it happen and have actually been wondering about amnps tray or mailbox mod or similar to try and achieve stronger flavor. I am going to try mesquite on my next smoke but I should have much stronger flavor than I currently am getting using hickory. The chips smolder completely to ash when they're done but flavor is light.
 
I'm gonna have to order one this week and give it a shot. I'd like to have one for cold smoking anyway lol. May order it now and see if I can get it by the weekend

I agree with Al.

An AMNPS is your best bet.

It sounds like you really like a lot of smoke flavor.

I use Hickory Pellets or Dust 95% of the time to get good smoke flavor. If it's still not strong enough for you from the AMNPS, you can light both ends. I tried it once, and it was too much, but you might like that. Get a lot of Hickory---Everything but Hickory & Mesquite would probably be too weak for you.

Wow, thanks for the link bear!! Been reading through it for the last bit since I got home from work. Also got an amnps ordered today with some hickory pellets. Can't wait to give it a whirl!!

Just an update on the mes...haven't had much time lately from working two jobs but I'm having much better luck now. Thank you guys so much for all your suggestions. I have it set up with the amnps inside a mailbox with an old grill damper on the front...is working great. The amnps really is a nice addition, thanks to Todd for a great product. Have done a couple pork butts, ribs, and chickens on it since with much improved taste. Nice 70 degree day today I have the WSM out with a brisket...sure is smelling good lol. Here's my mes setup now. Can't really see much of the mailbox but you guys know the mod. I have the amnps sitting on a brick inside and a twist damper out of an old grill mounted on the front door for air...works like a charm.

It's results like yours that have me thinking about doing my own mailbox mod this year. I'm also going to be trying out using Dust in my AMNPS for cold smokes since in my MES 30 Gen 1 wood pellets don't do that well in temps below 150°F.
