First thing I want to say is Merry Christmas to all.



Salamie all done.



Sealed and into the freezer Utah bound for SIL.



Pork butt for pulled pork.


I made 2 bags vac sealed in the freezer Utah bound.




Buckboard bacon for my butcher buddy.



Delivered it yesterday, brought a big smile to his face.



Leg of lamb for a demo person at Sam's.



Delivered it today, another big smile. Her and hubby were going to have pizza for xmas. I said you can't have pizza for xmas, you like lamb? Oh Jes, she said, she is hispanic, lol. You moke it for me? Moke? Yes that is the way she talks, lol.



I scored these, 2.99 a pound.



Saved over 100 dollars, thanks to my butcher buddy.




Vac sealed and froze 3, and kept 2 in fridge.



These were wet aged in vac seal for 8 days and started a dry age in the fridge.




These will be seasoned and smoked tomorrow for dinner and 1 is Utah bound.

I will post the results of the finished Primes tomorrow.

I know technically they are not prime rib, more a standing rib roast, just want to keep the grammer police off my butt.

As I recall 8 days in vac seal wet, and 5 days dry in the fridge.
