Anyone ever have the smoked sausage at the Memphis BBQ Company? I had some there the other day and I loved it. It is ground pretty fine and has the tiniest hint of maple flavor. Anyone ever try to make it? I would love to replicate their proprietary recipe for this.
 
Try this. Dont know if it will be close to what you tried but its worth a shot. You may have to double grind.

3 lean beef

2 lbs fatty pork butt

1 teaspoon cure 1

2 teaspoons dried thyme

1 teaspoon dried marjoram

2 tablespoons kosher salt

2 tablespoons rubbed sage

1 tablespoon fine ground black pepper

8 tablespoons (1/2 cup) real maple syrup

1/2 cup ice water

Well if it's one of Rick's recipe's it's a keeper either way.

I think I will try this. A little modification of the nepas recipe. What do you think Rick?

1 teaspoon garlic powder

1 teaspoon onion powder

1 ½ teaspoon dried marjoram

½ cup real maple syrup

¼ cup real hickory syrup

1 cup ice water
