I had to remember to get a final photo! A couple of bones left off of 2 racks and half of the third got sent away with guests. Small meal of people older than I....

I did not take a final temperature - the meat pulled easily off. Rave reviews.

In the past, my ribs were to salty or spicy for others, but this was a good balance.
I did not get any allspice in the finished meat so I'm going to rethink how I split up the herbs and spices in the rub:


EarthyAllspice1/2 tsp
EarthyCumin2 tsp
EarthyGarlic - powder2 tsp
EarthyMustard - powder1/2 tsp
EarthyOnion - powder1/2 tsp
EarthyOregeno2 tsp
EarthyPaprika3 TBS
EarthyThyme1 tsp
HeatBlack pepper - fine2 tsp
