Tried the andouille recipe again for meatloaf. Having tweaked the amount of salt, the seasoning worked. I think the correct expression is Yumm Y'all (I'm a Canadian so not 100% sure of that). There was mac'n'cheese as a side. I put several slices of bacon on the top of the meatloaf before cooking it. Smoked it a 250F for 3 hrs using cherry.
