Hello all.  I'm new to the forum and new to smoking.  I recently bought a Masterbuilt Pro Dual Fuel and gave it an initial run.  I had some problems with heat control and I was looking for some advise.  I tried running it empty with only the water pan on low and it was running at around 350 degrees.  Is this normal?  I had both bottom vents closed and the top vent was open (my Maverick Redi Check wires were running out the top vent). Is there a way to better control the temperature, it seems to be running very hot on low.  I would have expected lower temperatures
 
This is a really common problem with this smoker (I own one as well). To get temperatures into the 200-250F range, you'll have to spend a little money and buy a needle valve which gets installed inline between the propane tank and the burner. If you search "needle valve" on this forum, you should be able to find a ton of posts with various suggested parts and install directions. You could also probably just scroll down on the first page of this sub forum to find the info since I know I posted some of the info in a similar thread the other day.
