This one turned out ok looking but not the rise I wanted. Keep going.

It has a mild sourness.

Sure looks good . I like the looks of that last half slice .

I mixed up 2 this morning using variations of the Brotchen recipe you posted . Just put one in the fridge for a couple days . Not sure about the other yet .
I'm getting good results with that .
