On doing my famous S. Fl. Gathering Maple Borbon Ham...
I had to compromise as I didn't have any Maple syrup... Or Honey Dijon mustard... And I wasn't running to the store...
Brought all this to the party.. .
Made up a paste for the rub.. .Put it in fridge to thicken up while I trimmed their smoke/skin/coating whatever you want to call it off... Then pasted it up with my rub (paste)
Onto the Kettle it went... Set up with the snake method with chunks of Pecan in it... Lit one end and let it come up to 225... Ran it there all day (6 hours)... The beer pole was going full strength as well...
At two hours in I start putting a mop sauce on... At 4 hours in I start putting a glaze on... 6hours and it's done...
I threw a foiled pack of potatoes and onions on with about 2 houes to go...
Mrs. Danls made a macaroni salad to go along with it..
I gotta say... This was one of the better ones that I have done...
