Making jerky with egg yolks

I eat these meat snack bars from Epic https://epicprovisions.com/products/sausage-egg-apple-bar and the ingredients are chicken, organic dried egg yolk, dried apples, encapsulated lactic acid**, sea salt and spices.

Any reason you can't make jerky with ingredients like this in a regular smoker?

Ever having tasted this product, I dont know how the ingredients are bound together. Is Raw Chicken the binder, then the whole deal gets cooked and dehydrated to make it shelf stable? Cultured Celery Powder is the Nitrite Cure. It's Celery Juice that is Cultured with a Bacteria that converts celery's high Nitrate level to usable Nitrite. Even with the Cure, it will have to be Very Dry to keep at room temp...JJ

Thats where I am lost as what’s to hold it together. They are so tasty though.

sounds kinda funky to me...has to be baked at a higher temp or it wouldnt be safe...I wouldnt try it man. some kinda cure must be in there.
